Crowd Pleaser-Mochi Cake

This is probably one the only baking dishes I know how to make and it’s so easy. You honestly cannot mess this up!

Ingredients:
4 Eggs
1 Box of Mochiko (Sweet Rice Flour)- 16oz (454 g)
1 Can of Coconut Milk- 13.5oz (400 ml)
2 Cups of Milk
1/4 Tablespoon of Melted butter (you can also use any oil substitute of your choice)
2 Cups of sugar
Splash of Vanilla

Step One: Preheat your oven at 350F (176.67C)

Step Two: Beat your four eggs into a large mixing bowl. Add the one can of coconut milk and two cups of milk into the mixing bowl. Keep mixing! Add your two cups of sugar. Mix in the whole box of mochiko flour into the bowl. It is really important to keep mixing! While you are still mixing, add your melted butter and a splash of vanilla. Make sure that all the large lumps are gone. You want to have your consistency similar to battered pancakes.

Step Three: Butter your pan. Pour in your mixture into the pan and place into the oven for about an hour and ten minutes. Keep your eye on the mochi cake. You want to have nice brown edges. Your end result should look just like this photo below.

Perfect 5 Minute -Manila Clams

Manila Clams! These are quick tasty dinner
Prep Time: 10 Minutes
Cooking Time: 5 Minutes

Ingredients:

Small red bell pepper
Small green bell pepper
Ginger
Garlic
Green Onion
Basil
Pack of Clams
Kosher Salt

Step One: On high heat add cooking oil. Add bell peppers, garlic, green onions, and ginger for a couple minutes.

Step Two: Make sure your clams are cleaned and drained. Add your clams and stir-fry the pot for two minutes. Add a pinch of kosher salt. Add one tablespoon of any white cooking wine of your choice. I like to use rice wine, but you can pick yours! Stir fry for one additional minute.

Step Three: Cover your pot, wait about 3-4 minutes. Check on your clams. Once they have opened you can add a tablespoon of seasoned soy sauce for seafood. If you see any clams that are not open, you can discard them. (They are dead)

Step Four: Make your gravy by adding two tablespoons of water and one tablespoon of cornstarch. Mix well. Add your basil and green onion into the pot. While stirring pour in your gravy into the clam mix. You can stir for another 30 seconds or less and WAAALAHH! BAM! CLAMS.
